It’s almost time for our family’s traditional all-green cuisine lunch in honor of St. Patrick’s Day, and one of the dishes on our menu this year is tangy green apple salsa. It’s both tart and sweet with just the right amount of crunch.
The recipe came from a sweet church friend of mine, Mandy, who shared it with me several years ago. I recently came across it in my files and new it would make the perfect addition to our Leprechaun Lunch. It has a wonderful flavor, and is good for you, too!
I hope you’ll try it and like it as much as we do!
Ingredients for Tangy Green Apple Salsa:
- 4 large green apples
- 1/2 cup lime juice (we were out of limes, so I used lemon instead)
- 1/4 cup raw honey
- 1 sweet red onion (use a yellow onion if you prefer milder-tasting salsa)
- 1.5 teaspoons of salt
- 1 bunch cilantro
Directions for Preparing Tangy Green Apple Salsa:
Dice apples, onion, and cilantro into small pieces.
Toss chopped produce together in a glass serving bowl.
Stir together lime (or lemon) juice, honey, and salt.
Pour over the apples and onions and mix well.
You can dig in right away, but it will taste even better if you let the salsa marinade in the refrigerator for a couple of hours before serving (if you can stand to wait that long). It tastes great on tortilla chips or – if going meatless is not your thing – it also pairs nicely with grilled chicken.
