Our family is full of serious soup fans<\/a>, but we\u2019ve had a hard time tracking down a tomato soup recipe we all like. Some are too plain. Some are too thin. Others are too sweet. But, like Baby Bear’s porridge, Softa’s Tomato Basil Soup is just right<\/em>.<\/p>\n

A few years ago, I spotted a dear friend of mine<\/a> eating a delicious smelling bowl of tomato soup at our homeschool co-op, and she claimed the recipe (her mother\u2019s) is the best ever.<\/p>\n

So she shared it with me, and I tried it at home. Sure enough, my husband and I agreed, and our kids ate bowl after bowl, as well: Softa’s Tomato Basil Soup is the best any of us has ever tasted! and has earned a permanent place in our family favorites rotation.<\/p>\n

My friend’s mom, who has herself now become a very dear friend of mine, has been filling in for her at co-op the past year and a half and regularly delights me with tasty tidbits of her lunch. She’s an excellent cook and loves to experiment — a pinch of this and a dash of that.<\/p>\n

Fortunately for us, her daughter translated Softa’s tomato basil soup recipe into standard measurement, so I can achieve consistently good results every time I make it.<\/p>\n

The recipe below is for a double batch. It keeps well in the refrigerator and is just as delicious warmed over a day or two later, if you happen to have leftovers (which we rarely do).<\/p>\n
