The meals Mom serves and the ones we eat out, she explained, may <em>taste<\/em> good, but they aren\u2019t necessarily good <em>for <\/em>us.<\/p>\n<p>My husband\u2019s response to Rebekah\u2019s [debatable] opinion was, \u201c<strong>That sounds like a great summer project<\/strong>! Why don&#8217;t I put you in charge of making sure it happens?\u201d<\/p>\n<p><strong>So Rebekah has been planning our menus, buying our groceries, and preparing our meals ever since<\/strong>. Dad\u2019s paying her for the trouble, and \u2013 so far \u2013 the experiment has been a success.<\/p>\n<p>Of all the dishes she&#8217;s served us so far, her Honey-Glazed Chicken Kabobs are our favorite. An adaptation of a recipe she found online, it\u2019s very flavorful. The whole family gave it a 9 out of 10 ranking. (Which means we wouldn\u2019t want to eat it <em>every day<\/em>, but agree it deserves a place on the regular rotation).<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>2 zucchini <\/li>\n<li>2 chicken breasts, deboned and skinned<\/li>\n<li>1 lemon<\/li>\n<li>2 Tbsp cumin seeds<\/li>\n<li>2 tsp cumin<\/li>\n<li>1 tsp coriander seeds<\/li>\n<li>2 Tbsp honey<\/li>\n<li>2 tsp olive oil<\/li>\n<li>1 tsp black pepper<\/li>\n<li> 2 tsp sesame seeds<\/li>\n<li>1\/4 cup pistachio nuts (shelled)<\/li>\n<li>1 tsp smoked paprika<\/li>\n<li>2 handfuls spinach<\/li>\n<li>16 wooden skewers<\/li>\n<\/ul>\n<h2>Directions:<\/h2>\n<p>First, soak wooden skewers in a panful of warm water for about 20 minutes.<\/p>\n<p>Mix 1 Tbsp cumin seeds, half of the honey and all of ground cumin, olive oil, and lemon in a bowl for the marinade. <strong>Cube the chicken and zucchini and add to the marinade<\/strong>. Let sit for at least 20 minutes.<\/p>\n<p>Meanwhile, preheat oven to 350o F (or fire up the grill). Make dukkah by toasting sesame, coriander and the remaining cumin seeds in a dry pan until aromatic. Blend finely in a food processor with the pistachios, pepper, paprika and some salt.<\/p>\n<p>Thread the zucchini and chicken on skewers and place on a baking parchment-lined tray. <strong>Bake for 20 minutes, turning half way<\/strong>. Drizzle remaining honey over skewer and bake for a further 5 minutes.<br \/>\nServe with a spinach salad and the dukkah for dipping. Makes 4 \u2013 6 servings.<\/p>\n<p>(<strong>Normally, we would double this recipe to feed our crew<\/strong>, but since we ate it at lunchtime while Dad and the big boys were at work, and one of our boys at home is a self-proclaimed vegetarian, one batch of Honey-Glazed Chicken Kabobs was plenty.
