We love underdog stories, <strong>we&#8217;re proud of our southern neighbor&#8217;s David-and-Goliath win over the French at the Battle of Puebla<\/strong> (in 1862), and we enjoy a good Fiesta as much as the next guy:<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/player.vimeo.com\/video\/126908632?title=0&#038;byline=0&#038;portrait=0\" width=\"900\" height=\"674.4\" frameborder=\"0\" webkitallowfullscreen mozallowfullscreen allowfullscreen><\/iframe><\/p>\n<p>We are also happy for any excuse to eat Mexican cuisine! <\/strong><\/p>\n<p>Our daughters, Rebekah and Rachel, were up half the night chopping onions and peppers and <strong>preparing several authentic dishes for our family to feast upon today.<\/strong> That was completely their own idea &#8212; and they&#8217;ve kept their exact menu a carefully guarded secret &#8212; but if you&#8217;re interested in whipping up some terrific Tex-Mex to mark the day (maybe not as &#8220;authentic,&#8221; but definitely delicious), then here are a few of our family favorites:<\/p>\n<ul>\n<li><a href=\"https:\/\/www.flandersfamily.info\/web\/savor-it-slowly-guacamole\/\" target=\"_blank\" rel=\"noopener\">Savor-it-Slowly Guacamole<\/a><\/li>\n<li><a href=\"https:\/\/www.flandersfamily.info\/web\/cook-at-home\/#tex-mex-7-layer-dip\" target=\"blank\" rel=\"noopener\">Tex-Mex 7 Layer Dip<\/a><\/li>\n<li><a href=\"https:\/\/www.flandersfamily.info\/web\/cook-at-home\/#chicken-tortilla-soup\" target=\"blank\" rel=\"noopener\">Chicken Tortilla Soup<\/a><\/li>\n<li><a href=\"https:\/\/www.flandersfamily.info\/web\/cook-at-home\/#taco-soup\" target=\"_blank\" rel=\"noopener\">Taco Soup<\/a><\/li>\n<li><a href=\"https:\/\/www.flandersfamily.info\/web\/cook-at-home\/#easy-cheesy-enchildas\" target=\"_blank\" rel=\"noopener\">Easy Cheesy Enchiladas<\/a><\/li>\n<li><a href=\"https:\/\/www.flandersfamily.info\/web\/cook-at-home\/#king-ranch-chicken\" target=\"_blank\" rel=\"noopener\">King Ranch Chicken<\/a><\/li>\n<\/ul>\n<p>Busy today?
