Peanut Butter Chocolate Rice Crispy Treats

My children love to help in the kitchen, so I’m always glad for quick, simple recipes they can make without much fuss or mess. Some of our favorites are three-ingredient recipes, such as peanut butter cookies (1 cup sugar, 1 cup peanut butter, and 1 egg) or rice crispy treats (1 stick of butter, 1 package of marshmallows, and 6 cups of rice crispies).

The following recipe is a variation that combines two great tastes in one. Knowing how much I love the peanut butter squares at McAlister’s Deli, my daughter experimented to come up with this imitation. They’re yummy!

Ingredients for Peanut Butter Rice Crispy Treats:

  • 1 stick butter
  • 1 pkg of mini-marshmallows
  • 6-7 cups of crispy rice cereal
  • ½ cup peanut butter
  • 1½ cup chocolate chips

Instructions:

Melt butter and marshmallows over medium heat until smooth and bubbly.

Reduce heat and stir in peanut butter.

Add crispy rice cereal and mix well, until all is coated.

Press mixture into a buttered 9×13 baking dish until it is of uniform thickness. Melt chocolate chips in top of a double boiler, then spread on top of rice crispy layer.

Let the peanut butter rice crispy treats cool thoroughly before cutting into squares… if you can convince the kids to wait that long. They are every bit as delicious warm, albeit a little messier!
